15 May Rose & Vanilla White Chocolate Fudge
This is cheat’s fudge, so purists please look away now. However, this is a fantastic recipe: completely delicious, so easy you can make it in the microwave, so lovely you could bring it to a party. The recipe works with any good quality chocolate, but I think the luscious, buttery flavour of ghee comes through especially well when you use white chocolate.
Makes about 49 pieces (23cm x 23xm tin)
1 heaped tbsp of ghee
350g good quality chocolate
1 tin of condensed milk (397g)
Pinch of salt.
Any additions of your choice.
Melt the chocolate (either in a bowl over simmering water, or just the microwave!), stir in the ghee to melt. Add the condensed milk & stir well to combine. The mixture will change consistency & start to kind of bind together & move as one glossy mass. You will see what I mean if you make it.
Add any additions & smooth out into a tray lined with baking parchment or cling film. Set in the fridge overnight, then cut into portions the next day.
